Conviviality of the Fourth!

Hoping that your 4th was as wonderful as mine… There is nothing like being surrounded by friends and family celebrating Independence Day! There are few places I would have rather spent the Fourth than the hot little deserted island they call Palm Beach. Something about this place in the middle of July is just so appealing. We spent the day all day at the beach and then went back for a little All-American bbq, rooftop fireworks show and to top it all off, my best friend and big sister made it into town to celebrate with us. Couldn’t think of a better day!

The best part of the day was the FOOD! We had delicious sandwiches complete with all of the traditional fixings. I loved the watermelon salad dish so much, I snagged the recipe from our wonderful hostess!

Nails – Essie – Bikini So Teeny

*Watermelon Salad Recipe*
– 3 pounds watermelon, cut into 1-inch cubes
– 1 small red onion, thinly sliced
– 1 1/2 cups arugula
– 1/3 cup fresh orange juice
– 2 tablespoons fresh lime juice
– 2 tablespoons raspberry vinegar
– Salt & fresh ground pepper
– 1/2 cup shredded ricotta salata
– 1 cup coarsely chopped walnuts
– 2 tablespoons EVO
1. Toss watermelon with red onion, cover and refrigerate until chilled.
2. Add arugula to the watermelon, in a separate bowl, combine the juices. Pour over salad and season with salt and pepper. Top with ricotta salata and walnuts. Drizzle with EVO and serve!
